This course is part of our Centre of Excellence for Adult Education and is designed to introduce you to the core patisserie and confectionery skills needed to work in a professional kitchen.
• Food safety in the professional kitchen
• Introduction to menu planning, costings and teamwork
• Ingredients in patisserie
• Cold and hot desserts
• Biscuits, cakes and sponges
• Bread and dough products
• Chocolate work
• Finishing and presentation skills
This course also includes a minimum of 50 hours work experience in various hotels in and around Manchester.
GCSE grades 4-9.
Passion for the Hospitality industry and a future career as a pastry chef, or passion to improve your pastry skills.
How will I be assessed?
This course will be assessed through practical assignments and a written theory exam.
Continuing Your Journey
Upon successful completion of this qualification learners will be able to progress onto the Level 3 CTH Diploma in Patisserie and Confectionery.Careers page
