This course is designed to provide students with the skills required to work in a professional kitchen as a Chef or Chef de Partie. Upon completion of this course students will have developed advanced cooking skills in all the major food groups and will have the ability to integrate cooking skills to produce a variety of menus.
Topics include how to:
• Prepare and cook farinaceous dishes
• Prepare, cook and finish canapes and hors d’oeuvres
• Prepare, and cook complex fish and shellfish dishes
• Prepare, cook and finish complex meat, poultry and game dishes
• Prepare, cook and finish complex pastry, desserts and confectionery items
• Prepare, cook and finish complex sauces and dressings
• Prepare, cook and finish terrines, ballotines, galantines & pate’s
• Prepare, cook and finish vegetables and salads
• Prepare, cook and finish complex yeast products
• Menu plan and cost
• Self-manage in a professional kitchen
• Understand nutrition, allergens and sustainability
Students completing this course will gain work experience in The Manchester College’s restaurant and will work in partnership with The Chefs’ Forum and local hotels and restaurants.
Students enrolling on this course must already be working in a suitable establishment as a chef or in a supervisory role and must have 4/5 years’ experience in a professional kitchen.
Students must have GCSE grades 4 and above or GCSE grades A-C in Maths and English and must also have a level 3 advanced professional cookery qualification.
How will I be assessed?
This course will be assessed through synoptic assessments, assignments, internally set exams, and portfolio and project work.
Continuing Your Journey
Upon successful completion of this qualification, learners will be able to progress onto the Foundation degree for Patisserie and Confectionery.Careers page
