Deepening your knowledge and understanding of the skills required to become an accomplished chef, this Level 2 Diploma is the ideal next step for anyone who wants to work in a professional kitchen.
Building on the experience and skills learnt with the level 1 diploma, you’ll continue learning about the hospitality industry, food safety and typical health and safety procedures. You’ll also have options to learn more about operations in the catering industry, how menus are planned and how to deal with special dietary requests.
Alongside this core knowledge, you’ll begin to look at how to prepare and cook a huge variety of food types. You’ll look at the differences between poultry, meat and fish, discover what you can do with offal, and explore different options with dough. You’ll also learn how to make soups, stock and sauces, as well as a selection of hot and cold desserts.

How will I be assessed?
We’ll want to make sure you’re learning all the necessary skills and abilities to succeed as a chef, so lots of our assessment will be practical-based, as you demonstrate how to prepare and cook food in a real working environment.
There will also be some portfolio work based on time spent learning about the hospitality industry and food safety regulations in the classroom.
