Courses within our Industry Excellence Academy meet the needs of industry and prepare you for work in the sector. On this Technical Certificate in Professional Cookery, you to develop a general understanding of the Hospitality and Catering sector, and give you an understanding of topics including:
o Culinary quality
o Kitchen operations
o Health, safety and security
o Nutritional analysis
o Food safety practices and procedures
o Business, including risk assessment, waste management principles and supply chain management.

You will also get to experience and learn how to
o Prepare healthier food and cater to special diets
o Prepare and cook stocks, soups, sauces, fruits, vegetables, meat, offal, poultry, fish, shellfish, rice, pasta, grains and egg dishes
o Produce hot and cold desserts and puddings
o Produce pastry products
o Produce biscuit, cake and sponge products
o Produce fermented dough products.

A minimum of grade 4 or above in both English and maths.

Work Experience is a vital part of the course and you will be supported in finding a work placement relevant to your study.

To gain this qualification, candidates must successfully achieve the following assessments:
• One synoptic assessment,
• One externally set, externally moderated assignment
• One externally set, externally marked exam, sat under examination conditions

Employer involvement in the delivery and/or assessment of this qualification is essential for all candidates and will be externally quality assured

Upon successful completion of this qualification, you'll have the opportunity to progress onto one of our our Level 3 Professional Cookery or Patisserie and Confectionary qualifications ahead of starting a career in the hospitality and catering industry.
