Courses within our Industry Excellence Academy meet the needs of industry and prepare you for work in the sector. On this T Level Transition Programme in Professional Cookery, you to develop a general understanding of the Hospitality and Catering sector, and give you an understanding of topics including:
o Culinary quality
o Kitchen operations
o Health, safety and security
o Nutritional analysis
o Food safety practices and procedures
o Business, including risk assessment, waste management principles and supply chain management.

You will also get to experience and learn how to
o Prepare healthier food and cater to special diets
o Prepare and cook stocks, soups, sauces, fruits, vegetables, meat, offal, poultry, fish, shellfish, rice, pasta, grains and egg dishes
o Produce hot and cold desserts and puddings
o Produce pastry products
o Produce biscuit, cake and sponge products
o Produce fermented dough products.

GCSE English or maths at Grade 4 with the other at Grade 3, or Level 2 in Functional Skills. Attendance at our Jump Start programme is also compulsory.

Include details about employer involvement and work experience opportunities if necessary
- Alongside your studies, you'll undertake a minimum 15-day work placement as well as having regular guest speakers, workshops from industry experts, working to live briefs and more. You'll also be assigned a specialist employability tutor to support and prepare you for the world of work.

To gain this qualification, candidates must successfully achieve the following assessments:
• One synoptic assessment,
• One externally set, externally moderated assignment
• One externally set, externally marked exam, sat under examination conditions

Employer involvement in the delivery and/or assessment of this qualification is essential for all candidates and will be externally quality assured

Upon successful completion of this qualification, learners will... be able to progress on to our Level 3, T Level in Professional Cookery or into employment within the hospitality & catering sector.
